ITALIAN ZUCCHINI BITES RECIPE
Serve warm or at room temperature. Makes 1-1/2 dozen.
4 small zucchini
1 tablespoon olive oil
1/4 cup chopped tomato
1/4 cup chopped mushrooms
1/4 cup chopped red, orange, or yellow bell pepper
2 tablespoons minced olives
1 tablespoons finely chopped onion
1 tablespoon basil (1 teaspoon dried)
1 teaspoon oregano (1/4 teaspoon dried)
1/4 teaspoon pepper
Cut zucchini into 1" thick slices. Place in a steamer basket over boiling water, cover and steam 3 minutes. Drain and cool slightly. Scoop out some of the pulp, making a small cup to hold the filling. Heat oil in a saucepan. Add remaining ingredients and sauté about 3 minutes. Drain. Fill zucchini cups with vegetable mixture.
